Recipe: Snap Peas and RadishesIngredients

For the Lemon Herb Butter

  • 2 tablespoons butter, softened
  • 2 tablespoons very finely chopped herbs such as parsley, chives, dill, and cilantro
  • 1/4 teaspoon fine sea salt
  • 2 drops Lemon Vitality
  • 1 drop Dill Vitality

For the Sautéed snap peas

  • 1 pound sugar snap peas, strings removed and cut in half on the diagonal
  • 3/4 pound radishes, thinly sliced
  • Lemon herb butter
  • Sea salt to taste

Instructions

  • Combine all of the lemon herb butter ingredients together in a small bowl and mash together with a fork until well combined.
  • In a large skillet, heat 1 tablespoon butter over medium-low heat. Add snap peas and cook, tossing frequently for 2-3 minutes.
  • Add radishes and remaining butter; continue cooking, tossing frequently until radishes and snap peas are crisp-tender, 1-2 minutes more. Sprinkle with a pinch of sea salt to taste; serve warm.
