Recipe: Brown Butter Cardamom Roasted Carrots

Recipe Cardamom Roasted CarrotsINGREDIENTS

  • 2 bunches slender carrots (about 2 lbs), tops removed
  • 1 tablespoon extra-virgin olive oil
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon freshly ground pepper
  • 2 tablespoons butter
  • 1 tablespoons maple syrup
  • 2 drops Cardamom Vitality essential oil
  • 1 drop Black Pepper Vitality essential oil

INSTRUCTIONS

  1. Preheat the oven to 450°F.
  2. Cuts carrots in half lengthwise. Mix together oil, salt, and pepper. Toss to coat the carrots and spread them on a large sheet pan. Roast for 20-25 minutes until carrots are tender.
  3. A few minutes before the carrots are done, melt the butter in a skillet over medium-low heat, swirling the pan around while cooking until butter begins to foam, becomes brown in color, and takes on a nutty aroma. Add the maple syrup and stir to combine.
  4. Remove pan from heat and let cool for a minute. Then stir in the Cardamom Vitality and Black Pepper essential oils.
  5. Remove the carrots from the oven and toss them with the browned butter. Arrange on a platter and serve.
