{"id":13423,"date":"2016-11-14T18:26:24","date_gmt":"2016-11-14T23:26:24","guid":{"rendered":"http:\/\/essentialoilsage.com\/?p=13423"},"modified":"2016-11-15T04:34:14","modified_gmt":"2016-11-15T09:34:14","slug":"recipe-creamy-pesto-chicken-with-zucchini-pasta","status":"publish","type":"post","link":"https:\/\/essentialoilsage.com\/?p=13423","title":{"rendered":"Recipe: Creamy Pesto Chicken with Zucchini pasta"},"content":{"rendered":"<p><strong><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-13424\" src=\"https:\/\/essentialoilsage.com\/wp-content\/uploads\/recipe-creamy-presto-chicken.jpg\" alt=\"Recipe: Creamy Presto Chicken\" width=\"640\" height=\"340\" \/>INGREDIENTS<\/strong><\/p>\n<p><strong>Pesto:<\/strong><\/p>\n<ul>\n<li>1 cup spinach<\/li>\n<li>1 cup fresh basil<\/li>\n<li>13 cup walnuts or cashews<\/li>\n<li>2 Tbsp extra virgin olive oil<\/li>\n<li>1\/4 cup parmesan cheese<\/li>\n<li>\u00a02 tsp lemon<\/li>\n<li>1-2 drops Basil Vitality essential oil<\/li>\n<li>1-2 drops Lemon Vitality essential oil<\/li>\n<li>1 avocado<\/li>\n<li>1 tsp pink sea salt<\/li>\n<li>1\/2 tsp fresh pepper<\/li>\n<\/ul>\n<p><strong>Everything Else:<\/strong><\/p>\n<ul>\n<li>4 medium organic zucchinis<\/li>\n<li>1 pound organic chicken<\/li>\n<li>2 Tbsp extra virgin olive oil<\/li>\n<li>1\/2 cup cherry tomatoes<\/li>\n<li>Basil and red pepper flakes for garnish<\/li>\n<\/ul>\n<p><strong>INSTRUCTIONS<\/strong><\/p>\n<ol>\n<li>Using a spiralizer, mandoline, or vegetable peeler, shred zucchini into noodles.<\/li>\n<li>In a skillet, heat 1 tablespoon oil and add zucchini.<\/li>\n<li>Toss for 3-5 minutes. Remove once zucchini is warm and set aside.<\/li>\n<li>Chop chicken into cubes and sprinkle with salt and pepper.<\/li>\n<li>Heat 1 tablespoon olive oil in your skillet and add chicken.<\/li>\n<li>Cook chicken until no longer pink. Remove and set aside.<\/li>\n<li>In a high-speed blender or food processor, combine all pesto ingredients and blend until smooth. Taste and adjust as desired.<\/li>\n<li>Return zucchini noodles to the pan.<\/li>\n<li>Add in pesto, a tablespoon at a time until desired amount.<\/li>\n<li>Add in chicken and cherry tomatoes.<\/li>\n<li>Toss until combined and then transfer to serving plates.<\/li>\n<li>Garnish with fresh basil, sea salt, pepper, and red pepper flakes and serve hot.<\/li>\n<\/ol>\n<p><em>Note: Depending on the size of your zucchini, this may make a lot more pesto than needed or desired. Start with a little and then toss and add more as desired.
