INGREDIENTS
- 7 large eggs
- 1/4 cup whole-milk yogurt
- 1/2 teaspoon fine sea salt
- 1/8 teaspoon freshly ground black pepper
- 1 clove garlic, finely minced
- 1/4 cup chives, finely chopped
- 1/4 cup flat leaf parsley, finely chopped
- 1/4 cup basil leaves, finely chopped
- 1 tablespoon extra virgin olive oil (plus more for pan)
- 2 drops Marjoram Vitality™ essential oil
- 1 drop Basil Vitality essential oil
- 4 ounces fresh goat cheese, sliced or coarsely crumbled
- 1/4 cup frozen peas, thawed
INSTRUCTIONS
Yield: 6 servings
- Preheat oven to 375°F. Generously oil an 8-inch cast iron or other oven-proof skillet with olive oil and place in oven.
- In a large bowl, whisk together eggs, yogurt, salt, pepper, garlic, chives, parsley, and basil until well combined.
- In a small bowl, combine olive oil, Marjoram Vitality, and Basil Vitality. Add goat cheese and gently spoon oil over until goat cheese is well-coated.
- Carefully remove preheated skillet from the oven and pour in egg mixture. Scatter peas and goat cheese mixture evenly across the top.
- Return to oven and bake for about 25 minutes or until puffed and set in the center.
- Remove from oven and cool on a wire rack before cutting. Serve warm or at room temperature.
